About this dish

Fresh pasta around a springy fish mousseline of white fish, red curry paste, palm sugar and coconut cream, with fine green beans and shredded makrut lime leaf folded in by hand so they stay in pieces. Under and around them, a salsa verde of blanched coriander, Thai basil, mint, lime and anchovy, sharp and green against the sweetness of the filling. A shape everyone recognises, carrying a flavour nobody sees coming. Four ravioli per person, with the salsa verde packed separately.
