About this dish
Pork belly braised long enough for the fat to melt away entirely, pressed cold and then seared until several faces have gone crisp. A citrus glaze of orange, lime, soy and honey goes over it and turns sticky enough to stay on your fingers. Beside it, carrot, daikon, radish, red onion and zucchini pickled sharp, with coriander, Thai basil and sesame, and that acidity is exactly what the belly is asking for. Three pieces of pork belly per person, with the pickles packed separately so they stay crisp and cool.
