About this dish
Feta and cream cheese are whipped together until white and airy, then torn green olives are folded in by hand so the brine stays in pockets and turns up bite by bite. Lemon zest and chives run through it, za'atar and a good olive oil go over the top. Cold and salty, exactly what should be on the table at seven, with pan de cristal crackers beside it. One dip to share between four, with the pan de cristal crackers packed separately.
