About this dish

Whole pigeons seared in clarified butter and then cooked slowly under a lid in Cognac, Riesling and game stock, until the meat comes away from the bone. The cooking liquid is strained, reduced and finished off the heat with sour cream, which turns the sauce ivory and velvety rather than dark. White grapes and a little of their syrup go in at the end, sweet and cool against the game. Mousseline mash and green beans with shallot come with it. Two whole pigeons for two, with the sauce, the mousseline mash and the beans packed separately.
