Seared Lamb in Gochujang-Coconut Sauce with Fennel

About this dish
Tender lamb loin with a good sear, served in a sauce built on gochujang, coconut milk, and a sharp vinegar finish. The sauce has real depth — fermented heat from the gochujang, richness from the coconut, and enough acidity to keep it lively. A fennel salad with preserved lemon and fresh Thai basil cuts through the richness and keeps the dish feeling bright rather than heavy. The flavors draw on Korean and Southeast Asian ingredients but the whole thing hangs together cleanly. Ready to heat and serve — just warm the lamb and sauce gently and add the fennel salad fresh.
